Cardamom Oat Slice

Do you know, until today I’ve always thought it was cardamon not cardamom. Ignorance fought!

Anyway this cardamom oat slice from Taste has been on my to-bake list for awhile. And yesterday I felt like something sweet but not too sweet, so quickly whipped this up. It tastes like a mix between an oatmeal raisin cookie and gingerbread.

A lot of the reviewers said the icing wasn’t necessary so I skipped that part. I cut the slice into 16 pieces.

Ingredients

  • 1 cup rolled oats
  • 1 cup plain flour, sifted
  • 1/2 cup self-raising flour, sifted
  • 2/3 cup brown sugar
  • 3/4 cup desiccated coconut
  • 1/3 cup sultanas
  • 1 teaspoon ground cardamom
  • 125g butter, chopped
  • 1/4 cup golden syrup
  • 1 egg, lightly whisked

Method

  1. Preheat oven to 180C. Grease and line a 18 x 28cm base slab pan (I used a square 8″ one)
  2. Combine oats, flour, sugar, coconut, sultanas and cardamom in a large bowl.
  3. Place butter and golden syrup into a small saucepan. Stir over medium-low heat until melted. Stir butter mixture and egg into oat mixture and mix until well-combined. Spread into prepared pan and bake for 20-25 minutes.

James seems to like it – he was on his 5th slice before it even had time to cool down.
